Slow Cooker

Looking for a healthy and ready to go meal after a long day of work? We suggest trying a slow cooker for all of your healthy meal prep options! This gives you the chance of making dinner for your family while saving the hassle of cooking every night.

Meet Jessica Abril, a speech pathologist at Vistancia Elementary School in Peoria, Arizona. Jessica has a lot that she juggles: work, kids, commutes, workouts, rest and more! She uses the slow cooker to save time on dinner, cook healthy meals, and meal prep for later in the week. Pro tip: Jessica uses the slow cooker on Sundays to save time.

"I love the slow cooker because... it saves me the hassle of cooking every night," says Jessica.

Not only did Jessica recommend using the slow cooker for meal prep, she also shared her favorite meal to cook in the slow cooker.

Chicken Taco Bowls


6 chicken breasts

2 tablespoons minced garlic

3 tablespoon chili powder

2 teaspoon ground cumin

1 tablespoon garlic powder

½ teaspoon paprika

½ teaspoon onion powder

2 tablespoons tomato paste

¼ cup water

Juice from ½ lime

Salt and pepper to taste


  • Place the chicken breasts and 2 tablespoons of minced garlic in your slow cooker and set on high for 3.5 or 4 hours, or until chicken is not pink on the inside

  • Take the chicken breasts out and shred it up. Place the shredded chicken back into the slow cooker and season with chili powder, cumin, garlic powder, paprika, onion powder, salt and pepper.

  • Mix the tomato paste and water together and then place over chicken.

  • Mix everything together

  • After chicken is ready, have any side you want like rice, lettuce, corn, beans, salsa or guacamole to make your chicken taco bowls!
